Opened in March 2007, Suka offers a unique dining experience, offering modern Malaysian cuisine, set within the Sanderson, Morgans Hotel Group’s ‘urban hotspot.’ Suka is a creation of the partnership between MHG and highly acclaimed restaurateur, Jeffrey Chodorow (China Grill Management). Suka has introduced a new menu and serving style that has evolved to suit the restaurant clientele and their desire for a truly modern Malaysian experience. By removing some of the more ‘European’ influences and ingredients the concept has been refined to more closely mirror the Southeast Asian cuisine that Suka champions.

This new seasonal menu has been created to simplify the experience for diners. Dishes are grouped by category; crustacea, fish, pork, vegetarian, poultry and beef/lamb, as is tradition in Malaysia. With the newly reduced portion sizes and prices, diners are recommended to order 3-4 dishes per head, allowing diners to enjoy a meal of 4 dishes per person for less than £40.

The menu at Suka showcases the delightful flavours and ingredients of Malaysian cuisine. Highlights from the menu include Nasi Goreng, a traditional Malaysian fried rice with a shrimp omelette; Terlagi-Lagi, light and crispy chilli soft shell crab, Mamak Barbeque Chicken in a traditional Malay Barbeque Sauce and Suka Sliced Steak, tenderloin steak with spiced onion salad, shaved pickled garlic and chilli jus. Other dishes include the Papaya & Pork Belly Salad of slow braised and crisped pork belly tossed in chili vinaigrette with papaya, roasted jalapeno and spring onions, Tofu Claypot with silken tofu, shimeiu mushrooms, roasted chilli and young ginger or the Beef Rendang, marinated in coconut milk and Southeast Asian spices, braised until tender and served with jicama salad.

The lunch and dinner menus include lighter dishes, ideal for the health conscious or people on the go, including Lemongrass Sea Bass, sea bass fillets served in a chilli lime broth; Crispy chicken salad, shredded chicken breast marinated in southeast herbs with Jasmine rice, with a slow poached egg and sweet & spicy dressing or the Spiced Watermelon Salad with watermelon, chili and spring onion with hoysin sauce.

No dining experience is complete at Suka without sampling a few dishes from the exciting dessert menu, including the Suka Trifle of soft tapioca coffee cream with pandan sponge and caramelised bananas or the Kaffir Lime Chocolate Fondant, a rich warm chocolate fondant served with ginger sorbet. Accompanying dessert wines range from Dento Plum Liqueur Sake, Royal Tokaji ‘Blue Label’ 5 Puttonyos Aszu 2000 to more traditional marques such as the Chateau Belingard Monbazillac 2003 from France.
