The doors open to the public at 12 noon and then it's non-stop straight through until last orders. Once customers are seated and ready, their orders are keyed into hand-held mobile pads and relayed by radio signal to the appropriate station in the kitchen. The food is served fast and every dish is cooked to order and delivered to the table when it is ready, so meals do not always arrive at the same time. Chopsticks are provided for customers to eat their meals. The menu explains how to eat noodles in a traditional japanese way - without breaking them, which is considered unlucky, this involves slurping the noodles noisily and increases the amount of oxygen taken in with each mouthful enhancing the flavour.
